Preparation
The El Llano works well as both drip and espresso. In a 3-cup woodneck or #02 V60 cone, dose 30 grams of coffee and brew at at 91°C (196°F).For espresso, pull 16 grams for 26–28 seconds at 200.5°F, for a target volume of 1.75oz.

"I was fortunate enough to have spent 2 days and a night at Don Mayo in March. While there I toured the farm and mill extensively, cupped several lots of their coffee in the cupping lab located in the middle of the drying patio, hiked to the top of the highest mountain that overlooks the farm and San Marcos, and enjoyed the unrivaled hospitality of the Bonilla Solis family. Pablo, our host and the son of Hector Bonilla Cruz, took me through every step of their processing and storage. Everything the coffee touches throughout the process—from cherry to parchment—is impeccably clean and well-maintained. These guys take their coffee seriously and put a lot of love into what they do; it really shows in the cup they produce."

New coffees from 2010 crops are arriving weekly. Featured now are two very different coffees from a pair of farms in Guatemala. El Bosque is an aromatic, layered drip experience; La Trinidad pulls into an intense and thick espresso.
